VINEYARD

Vineyards from the farm named LA ASPERILLA, located in Peñafiel (Valladolid) at an altitude of 750 meters above sea level and facing east. Planted in 1932. A natural and logical viticulture is carried out without chemical products such as herbicides, pesticides, systemics, etc. The plants in this plot are not watered, not even at times of greatest water stress. These natural measures and harmonious respect for the surroundings of the vineyard allow us to pick grapes that clearly express the land they come from and the particularities of each vintage.

GRAPE VARIETIES: 80% Tinto fino + 20% Others (Albillo, Moscatel, Palomino, etc.)

GRAPE VARIETIES: 80% Tinto fino + 20% Others (Albillo, Moscatel, Palomino, etc.)

PAIRINGS

Due to its variety of nuances, it can combine well with spicy Indian dishes, soups and stews. It is also interesting with sirloin with cream or other traditional dishes such as fried egg with potatoes.

CONSUMPTION RECOMMENDATIONS

Suitable for immediate consumption or storage. Service temperature: 15ºC/16ºC.

PRESERVATION

Constant temperature between 14ºC and 18ºC protected from light and humidity.

Harvested the first week of October manually, 50% of the grapes were not destemmed. It was vinified in a stainless steel tank with daily punching with the native yeasts, no correction or contribution was made. Maceration of 15 days. Settlement and start of malolactic fermentation in French barrels. After malolactic fermentation, the wine rests in 500-liter French oak barrels. It is not racked until bottling to remove impurities and solid residues by settling, thus allowing it to reach the bottling phase in optimal conditions of clarity and natural stabilization. However, during its life in the bottle, precipitates may rise due to its natural elaboration.
