VINEYARD

50% of the grapes come from vineyards in the Sierra de Gredos in Navarredondilla (Ávila) and the other 50% from vineyards in Peñafiel (Valladolid), granitic rock soils are mixed with sandy, clayey and limestone loam soils. The altitudes range between 1,100 meters above sea level in the Sierra de Gredos and 700-920 meters in different areas of Peñafiel.

CONSUMPTION RECOMMENDATIONS

Service temperature: 12ºC/13ºC.

PRESERVATION

Constant temperature between 14ºC and 18ºC protected from light and humidity. Consume within a maximum of 1-2 years from its purchase.

Harvested the second week of September manually. All the bunches were vatted whole without squeezing or destemming. Vinified in a stainless steel tank with the native yeasts of the different vineyards of the vintage. No correction or contribution was made to the must. Settlement and start of malolactic fermentation also in stainless steel tanks to then take the wine outside and, taking advantage of the rigors of winter, clarify and stabilize it naturally. It is racked to remove impurities and solid residues by decantation, allowing the wine to reach the bottling phase in optimal conditions of clarity and natural stabilization. However, during its life in the bottle, precipitates may arise due to its natural production.
