VINEYARD

Several vineyards along the Ribera del Duero, from almost 750 meters of altitude to almost 1,000 meters. The soils vary from red clays, alluvium and limestone.

TYPE OF PRODUCTION: Aged Red

GRAPE VARIETIES: 100% Tempranillo.

Roast lamb, suckling pig, ribeye, cheeks, lentil curry.

CONSUMPTION RECOMMENDATIONS

Suitable for immediate consumption, although it will improve remarkably over the next 3 to 5 years. Service temperature: 15ºC/16ºC. Does not contain allergens.

PRESERVATION

Constant temperature between 14ºC and 18ºC protected from light and humidity.

The grapes were harvested the first week of October manually. It was squeezed but not destemmed. It was vinified in a stainless steel tank with daily pump-overs, maceration for 12-15 days. Settling and initiation of malolactic fermentation in tanks for approximately 20-30 days. Then, the appropriate racking is carried out taking advantage of the cold of the rigorous Castilian winter so that the wine goes to rest later in French oak barrels. No racking is carried out until bottling, which allows us to provide optimal conditions of clarity and natural stabilization. During the life in the bottle, it is normal and possible that precipitates arise due to its natural elaboration.
